Comment/Description

This seminar serves as an introduction to the burgeoning and interdisciplinary field of food studies. Focusing on the ever evolving relationship surrounding food within the U.S. American context, we will survey the various critical discourses, ideologies, issues, politics, and practices surrounding U.S American food and foodways from the (pre)colonial era to the present. In addition to the systematic examination and discussion of exemplary primary texts across the centuries, we will also discuss the various interdisciplinary methodologies used in food studies as well as its crossovers with American cultural studies.

Critical issues and topics may include: indigenous foodways, (settler) colonialism, chattel slavery, domesticity/food and gender, industrialization, culinary nationhood/(gastro)imperialism/food sovereignty, im/migrant foodways, vegetarianism and veganism, restaurant culture, gentrification/cultural appropriation, and food and public health.

Most readings will be made available on StudIP.
